BC Grass Fed Beef Recipe - March Stew
March Stew
2lbs Stew meat
1.5 bottles of stout ale
1 large onion
1 full bulb of garlic (many cloves)
2 tsp finely chopped fresh ginger root
1 cup frozen or fresh peas
1 cup frozen or fresh whole green beens
6 medium potatoes
1tbsp extra virgin olive oil
1tsp salt
1-2 tsp freshly ground pepper
Preheat oven to 300°F. Coarsely chop the onions and garlic. Cut the potatoes into 1 inch cubes. Cut the beef into 1 inch cubes. Preheat a large dutch oven to medium heat. Add olive oil. Stir in beef until evenly browned. Add onions and garlic and stir fry for one minute. Add potatoes and ale. Add salt and pepper. Bring to slow boil. Place in the middle of preheated oven for one hour. Reduce oven temperature to 275°F and add peas and beans and cook for one more hour. Remove from oven and serve with freshly baked biscuits, buns or bread and a cabbage or lettuce salad.
